korean style stuffed pepper bento

 
Packed this bento for hubby, a big fan of Korean flavors! The bright yellow pepper is filled with a stir fry of ground turkey, Asian mushrooms, mini zucchini, red cabbage and Korean red pepper paste. Bright pink pickled ginger is a zippy garnish. Garden-grown shiso leaves are packed as wraps along with local apricots and cherries from the farmer's market.

I love Korean cuisine and I love the fact that this bento is quite low-carb too - I eat too much rice and noodles *lol*!
