cooling ginger chicken salad bento

 
We are currently amid an intense Indian Summer heat wave here in Santa Rosa, with temperatures hitting 100 and even beyond. To cool off, a bento with a light chicken salad (scallions, minced ginger, mirin, a touch of mayo), quick-pickled cuke slices (tossed with rice vinegar) and slices of heirloom Charentais melon with bright sprigs of garden mint.

These are definitely salad days all right! I am loving this late summer. The bay area usually gets warm summer temps in the first couple weeks of October. Right on time :D
I am really craving this delicious salad right about now...

Sounds so good, love the salad! So glad I live on the coast where we never reach 100 degrees :D I think we even stay cooler that the rest of the country in the summer. Your flowers are always beautiful so nice that you share them with us! Makes me smile!
