november colors, thai curry bento


Hi pals! Today's bento was based on a rich and easily made Thai curry we enjoyed for dinner last night. Simple recipe: stir fry several diced shallots, add one tin of aromatic Thai curry paste to the pan. I like the Maesri brand...




Blend with coconut milk...


Pour the sauce over fish fillets in a baking dish, add sliced scallion and tomato. Bake for twenty minutes or so in a 375 oven.


Serve with asparagus...yum!


I reserved some for lunch today with to share the bento with brown rice, bright purple cabbage and sugar snap peas (I'm addicted to them!).


It's a gorgeous day: almost balmy, bright blue sky, burnished leaves, pastel flowers still in bloom...on the radiant edge before frost arrives.

Oh good I picked up three tins of curry paste a little while back, i was a little hesitant to try them. It is this same brand yay, I want to make something with it now...good to know.

The colors are stunnig, love your beautiful photos. The squirrel looks right at home there. Our squirrels have a bunch of acorns that are just now coming off the trees ready for them to gather or eat. Ha! they ignore them and go for the bird feeder!

Hi Lynds! Thanks as always for your great comments, they make my day! Just add coconut milk and you'll love the results. Squirrels are pretty stealthy and intent, aren't they? Though not so much as our scarily smart raccoons, LOL.

We have a very cute and chaos-making family of them come to our backyard every night...talk to you soon, dear!

wow.. what an exotic dish... i love curry too.. rich taste..and yum with the coconut milk..

I wonder how many types of flowers you got at the woods near your house.. the flowers pictures you posted amaze me.. what's the name of the flowers dangling from mini plant?

and love the little chipmunks munching on the acorn.. lol..

Hi Bobo! Its true there are many kinds of flowers in this area, the one with dangling flowers is a hydrangea! Have a great day...

This rich curry reflects the beautiful golds, amber, and reds of autumn so perfectly!
I will have to look for this brand of curry on my next foodie shopping trip.

Stunning fall photos Jenn! The trees here are also starting to turn. I'm inspired, maybe a fall leaves road trip or walk in my future.
