lemony salmon salad bento

Today's lunch features a lemony salmon salad in a crisp endive leaf, springy snow pea tops, sugar snap peas, radish and roasted sweet potato slices. The bright golden orange roses are sun substitutes amid a rainy and overcast week!

Lemony Salmon Salad

To one can of red or pink salmon, flaked, add the juice of one plump lemon, half a diced orange pepper, a small diced red onion, several thin-sliced scallions, mayo to taste.

Simple, refreshing, nutritious and quick! Happy Friday, pals...

Such a bright and springtimey bento! It's been gray here as well.. nice to have a bright lunchtime, isn't it? I'm envious of your radishes.. I'm still waiting for the farmers market near me to start! Have a wonderful weekend!

Hi there Megg! Thanks for stopping by, I was thinking of you this morning and wondering if spring was warming things up in Chicago...after several days of rainy cool, we are about to get the first really warm days, maybe up to 90 degrees by Monday (and into next week)!

I'm off to your blog to see what's cooking :D Enjoy the weekend!

Greeting Jenn!
What a lovely and tasty lunch you've concocted to brighten up your gray day! Love your use of the endive, delish! and I have to admit I am a bit jealous of your beautiful yellow roses. I've had terrible luck with them tho they are a favorite.

Sounds like some sparking sunshine in in your future -- Cheers to that!

Hiya Robin! Many thanks, dear! I can't take credit for these sunny blooms--they are from Trader Joe's, tee hee! Very bright day here with almost summery temps but still low humidity, we'll savor that for as long as we can...

Any fun cooking projects this weekend? We just came back from a market fair with some lovely black raspberry preserves...thinking it would make a great glaze for roast chicken :D

Talk to you soon...
