tofu bunny bento

Today's bento features a new find: red quinoa. We picked some up at Trader Joe's this week and have really enjoyed its subtle, nutty flavor and burgundy-colored fluffy grains. It shares the magewappa here with crab soboro (made with a generous helping of ginger and red onion), a tofu bunny, edemame and a juicy peach.

Really lovely bento, Jenn! I am a fan of quinoa, but I have never tried red quinoa. I will have to look for it.

Have a great weekend! I'm headed out to my first camping trip of the season, and I cannot WAIT! No campside bentos, though. I think we are sticking to the basics.

Thanks, SB! This quinoa variety quickly became a fave--earlier in the week sharing the plate well with chipotle chili, avocado and Greek yogurt for a tasty dinner!

Beautiful bento! I like your tofu bunny! I have some red quinoa I was going to use in with my red rice and grains, but couldn't find which cupboard I put it in. I found it afterward in a jar that I put it in. Hehe! We are trying to get a lot more grains in our diet, and are really enjoying it. I use quinoa a lot.

Is that a maple tree in the last pic? It's very peaceful.

Hi there Lyndsey :)Thanks for your visit and lovely comments! Its great that you are diversifying the whole grains in your family diet--not only are they tasty, they've also recently been found to have vastly more phytochemical goodness than originally thought...quite win/win!

By the way, did you name your tofu bunny? Hehe! I like how there's edamame sprinkled around, like it's a treat for him :D I hope you have a great weekend!

Hi Carol! No, but that's a great idea...any suggestions? Ha, did not think of it when I put down the edamame but I love that interpretation!!Have fun relaxing in the cool a/c with sports coverage this weekend :)

is that the red quinoa under the tofu bunny (so cute btw)? i have used regular quinoa but never red, i'm surprised it's so dark (like, almost as dark as purple rice)! it's such an amazing grain, so much protein, and now knowing it comes in such a dark color makes for more bento possibilities (like the amazing contrast you've achieved here with the tofu)!

hi megan! yes, it appeared at Trader Joe's the week I made this bento and I have not found it on sale there since (TJs giveth and TJs taketh away, arggh...). the color is great and contrast-y and I found the flavor richer and nuttier than "regular" quinoa. Hope you can find some, its delish! Thanks for your sweet comments :)
