turkey pastrami sandwich bento

Happy Friday, bento pals! For deli-style lunch today: turkey pastrami Rachel sandwich, layered with Swiss cheese, homemade coleslaw, sauerkraut and Russian dressing on rye bread grilled to a toasty, buttery finish.

The coleslaw made lighter and less caloric with Greek yogurt and just a bit of mayo,  I added horseradish to the Russian dressing for extra heat and flavor. Yum!
Mini gherkins (tiny and perfect for bento!) honey-drizzled raspberries and yellow pepper saute for lunch, too.

Wishing all a happy and relaxing weekend!

Yum! Now that's the version of a "Ruben" that I would like! I like to make my own cole slaw too so it won't be as sweet! You're right...the gherkins are bento-perfect. Are the pansies from your yard?

P.S. I passed my the ParaPro Assessment Test! Now I can relax! Have a wonderful weekend!

Hi Lyndsey! Woo-hoo, congrats on passing your exam--time to relax and celebrate this weekend!!

I agree that most store-bought slaws are way too sweet--I was going for something more mellow, tangy, piquant here and I liked the results ;)

Yes indeed, and we've had the strangest sequence of dark skies and sun alternating all day today, with lots of wind. Thanks for your visit and once again congrats!

Now we're talking here... Variations on a Reuben! What a great link! And I simply adore homemade coleslaw, especially IN a sandwich. Mouth watering. A+ bento!

The promise of snow (here in California) hasn't happened. Yet.
To the rest of the weekend. Cheers Jenn!

Hiya Judy! What an awesome comment, glad you liked this, thanks! I agree, coleslaw in the sammie is the way to go...

Even with snow possibly on the way, the real trend is towards flowery spring, yes? Yipee!!

oh yummmm !
that sandwich looks SO GOOD! i love that melted cheese oozing out.
and yet again, your pictures are so bright and vivid !

which brings me to ask..,
my pictures always seem to fade when i upload them, and they seem to auto save as jpg.. i was wondering what you do to save yours to retain all the bright vivid colors? your help would def. make my blog-life a hundred times more enjoyable!
i hope to hear from you soon (:

Hi Edible Art! Thanks for your kind comments and for joining my site! Hmmmm, on your question, I save my photos using Windows (I use a Canon S90) to my pc and then edit them in Picnik for brightness and clarity.

Hope this helps and I look forward to seeing more of your explorations of art and food!
