turkey pastrami sandwich bento

Happy Friday, bento pals! For deli-style lunch today: turkey pastrami Rachel sandwich, layered with Swiss cheese, homemade coleslaw, sauerkraut and Russian dressing on rye bread grilled to a toasty, buttery finish.

The coleslaw made lighter and less caloric with Greek yogurt and just a bit of mayo,  I added horseradish to the Russian dressing for extra heat and flavor. Yum!
Mini gherkins (tiny and perfect for bento!) honey-drizzled raspberries and yellow pepper saute for lunch, too.

  1. Yum! Now that's the version of a "Ruben" that I would like! I like to make my own cole slaw too so it won't be as sweet! You're right...the gherkins are bento-perfect. Are the pansies from your yard?

    I agree that most store-bought slaws are way too sweet--I was going for something more mellow, tangy, piquant here and I liked the results ;)

    that sandwich looks SO GOOD! i love that melted cheese oozing out.
    and yet again, your pictures are so bright and vivid !

    which brings me to ask..,
    my pictures always seem to fade when i upload them, and they seem to auto save as jpg.. i was wondering what you do to save yours to retain all the bright vivid colors? your help would def. make my blog-life a hundred times more enjoyable!

  14. Hi Edible Art! Thanks for your kind comments and for joining my site! Hmmmm, on your question, I save my photos using Windows (I use a Canon S90) to my pc and then edit them in Picnik for brightness and clarity.
