country salad bento

Hi bento pals! Quick post for today...lunch is a refreshing salad with spinach, romaine, fennel, tomato, red cabbage, scallion, tasty green olives. Lemon-extra virgin olive oil dressing.

Mini salmon cakes made with plenty of lemon, minced red onion, parsley and Greek yogurt plus a pita triangle toasted with olive oil and thyme round things out!

  1. Ooo I like those mini salmon cakes, all tucked in my favorite bento box! Love the fresh greens and a touch of purple cabbage! I hope to be back bentoing soon, when things slow down and I pass my test I have been studying for! See ya soon!

  3. So yummy looking salmon patties! I can imagine the taste combined with that lemon olive oil and the yogurt.. oh yum! Great and super colorful looking bento! Wish mine would be as bright as yours *envy* ;)

    Is winter relenting at all where you are? Had nice light for this photo with a bright sunny sky today, but it's still chilly here. C'mon spring!!
