aleppo pepper carrots bento

Hi, folks! Today's lunch features a little toasted roll filled with scrambled eggs, pesto-yogurt sauce and scallions alongside baby spinach, asparagus and carrots roasted with a dusting of aromatic Aleppo pepper, a unique spice shared by a super bento pal. I made a large batch of the peppered roasted carrots and cannot stop munching on them!

The sweets section includes raspberries, blackberries, a vanilla mini cupcake and a skewer with yummy Meltyblend chocolates (thanks, bento buddy!) and more raspberries...

Sending thoughts and prayers to all those affected by the terrible natural disaster in Japan, and the hope that friends in Asia and on the West Coast remain safe and well. Please visit the Red Cross Japan Earthquake and Tsunami donation site.

Beautiful bento, Jenn! Roasted carrots are so delicious. And have you heard anything from babykins of Soul Soup Soap? I am worried about her.

I hope our friends are okay!

Jenn your bentos always take me away somewhere else. Can I come and live with you? The colors are so vibrant, and the aleppo pepper looks so good. I love trying all kinds of spices. I made a few bentos this week, but they look so sloppy and thrown together I don't think I can post them. I was excited because my sister bought me a bento and some cute picks for Christmas...which I just got when she was down in Feb visiting Florida. I also bought a Hello Kitty one when my daughter and I were in Tampa and they had a Sanrio store there!

Thanks for brightening my day, and have a nice weekend! Prayers for Japan Earthquake and Tsunami victims.

Dear Lyndsey, I love reading your warm & thoughtful comments, they feel like true visits! It would be so fun if we could hang out and cook and bento irl :D

I'm excited to see your new bento stuffs--you know how obsessed I am with cool and cute picks! Did you guys enjoy exploring the Sanrio shop?

Thank you for sharing your prayers here...such massive loss and calamity, my heart just aches.

P.S. I'm sure you've probably heard by now too, but Babykins emailed me back and she is well and safe.

Thanks you Jenn for including your thoughts for our friends in Japan. It is hard to imagine ordinary life when such devastation is happening a world away. We had significant damage to our harbor when the waves hit Santa Cruz, CA and were lucky to have hours of tsunami warnings to prevent human injuries. Today the coastal warnings are lifted and the warm spring sunshine surrounds us. It is unreal.

Your lovely spirit shines in all you do. Take care.
