This bento was inspired by the fabulous Debra of hapa bento renown, as an entry in her new B.O.M.B. (Best of Month Bento) themed bento project. January's theme is (wonderfully, for this chilly month) roasting!
This bento contains oven roasted radicchio, fennel and mushrooms. Inside the pastry, more roasted goodness: roast chicken combined with roasted onions, fennel, smoked Spanish paprika and aged Gruyère cheese. Its radish decoration was inspired by images in a favorite book of Japanese folk art:
Fennel, radicchio and mushrooms with fennel fronds and methi leaves:
Thanks again to Debra for creating this fun and participatory project!
