This post is a thank you to hubby Jamison for making a DELISH stuffed eggplant entree for our dinner this evening, featuring these wonderful round farmer's market eggplants:
To make the wonderful dish you see above, Jamison combined ground organic beef, garlic, orange-infused olive oil, Parmesan cheese, oregano and the eggplants with creativity and love. The small bit of eggplant that I remembered not to devour tonight has hopped into this yellow bento box (a San Francisco find) with some purple pepper, a yummy cucumber onion salad (also made by J.), edible nasturtium leaves and flowers and some cherries.

Don't you just love short weeks? I am very excited that it's almost the weekend. I love those round eggplants, they are so cute :D Can't wait to read up on your vacation! (I'm so behind!)

Love the expression on "your" kitty's face. When "our" kitty sees us outside he runs right over to us then will walk right by us and then lay down and roll...so we have to come over to him and pet him even though you know that's why he came running over in the first place. So funny...these borrowed cats of ours. :D

We are cat-sitting for neighbors this weekend, taking care of Sophie, the sweetest tabby ever and her surly and unpredictable brother George...

I really get a feel for your inner world through your photographs and descriptions. Your photography is so amazing, especially the one taken of the golden gate bridge. Wow. That one is breathtaking, Jenn! It was nice to feel a part of your journeys through Japan town, too. When you're out here next, I'd love to go with you two to Japan town-because I love it so there, and because you have a special eye for all things bento and beautiful:-) Lastly, I want to mention how delicious Jamison's eggplants look, both uncooked and cooked! Deborah Little Bear was talking about eggplant recipes the other day, and I can only imagine how tickled she would be to get this recipe from J. Me, too!!
